Many newspapers do not include margins of error with large amounts of data. They correctly or incorrectly believe that readers will recognize that all surveys have a margin of error. Most readers are confused by MOEs and do not understand the relevance. Indeed, very cool maps. I just sent an email to their web editor thanking them for putting up the maps so soon, but also asking them that to add a note to the maps to clarify how they are defining race and ethnicity. The Census Bureau defines Hispanic/Latino ethnicity as a different category from race (Hispanics can be of any race); the NY Times maps are doing some lumping together.
